Born from chef Morgan de Polignac's own life and experience, this place is an invitation to discovery, the embodiment of a culinary creativity he takes the greatest pleasure in sharing with you. Each week, Morgan de Polignac offers a seven-course menu, shaped by the seasonal products available. The idea is to let yourself be guided, discovering each dish as it comes and giving yourself over to the sheer pleasure of tasting, free of preconceptions. You are welcome to play the game and guess the components of each dish for yourself, explanation coming afterwards. If you prefer, we can introduce the dish beforehand.
Drinks can be a surprise too, according to your mood and your inclination. Should you prefer to choose for yourself, Maxime will guide you according to your tastes. We give a particular place to pairings, and offer food-tea and food-sake pairings that change every week along with the menu.
Mofusan – the experience
Cooking is an act of sharing — of the chef's inspirations and culinary research, of the produce and the drinks he selects. The pleasure of settling in, in a relaxed setting, and discovering unexpected combinations of flavours.
Hospitality is an integral part of the Mofusan experience. Maxime, the waiter, will welcome you, guide you through your choices and make discovery a pleasure.
The single menus (four courses at lunch, seven in the evening) are built on surprise, and change every week.
Food-tea and food-sake pairings are proposed each week, alongside a wine list built on the selection of the chef and his sommelier; the purpose being to seek out gems, wines that give emotion and pleasure to the mouth.
The menus require an open mind and a willingness to take your time — the experience lasts at least two hours.
Not every dietary requirement can be accommodated, given the complexity of the menu, but the chef will do his best to take them into account.
The dining room has a maximum of 24 seatss, with tables no more than 6.
For events or group meals, please contact us, to discuss any option.
This menu is suitable for guests aged 12 and over; adjustments can be considered. In the evening, the experience is a relatively long moment and may not suit everyone.
Pets are unfortunately not welcome.
The team
The chef
A former teacher of Chinese and a keen cook since childhood, Morgan decided at 35 to devote himself to his passion. Drawn naturally to what tastes good, he built his convictions on the pursuit of flavour, the pairing of tastes and, above all, sharing. After experiences in Lyon restaurants — French and Chinese cooking alike, notably Papasan alongside Nhung and Vlad, which left a singular mark on his career — it went without saying that what came next would be his own creation. His many travels through Asia, and particularly in China and Taiwan where he lived, have given Morgan a deep familiarity with Asian flavours and techniques. Three principles are dear to him: the products, the combinations and the techniques — the foundations of his creativity. Morgan's aim is to surprise, to delight and to give pleasure, while remaining true to his convictions.
Front of house
After several years in Canada working in sound engineering, Maxime made his way in a fine-dining restaurant in Rognes. Armed with an experience that went well beyond the basics of service, he met Morgan. It was an instant connection, driven by a deep respect for his creative approach. His guiding principle: to accompany Mofusan's passengers into chef Morgan's world — the world of a truly flavourful experience.

(Translated by Google) We had lunch at Mofusan on Friday and left absolutely delighted. The four-course menu is an explosion of flavors with every bite, with a true coherence from one dish to the next. The combinations are very original, but always executed with remarkable precision and taste: it's precise, balanced, and never unnecessarily showy. We particularly appreciated that after each course, the ingredients used were explained: it made us want to take another bite, reflecting on what we had just learned. The dishes flowed seamlessly, as if each one complemented the previous one, with a delightful surprise along the way. I highly recommend this restaurant. Thank you to the chef!
