Mofusan is Morgan de Polignac's fine-dining restaurant in Lyon 6: a signature cuisine shaped by Asian flavours and techniques, served as a single surprise menu.
The chef
A former teacher of Chinese and a keen cook since childhood, Morgan decided at 35 to devote himself to his passion. Drawn naturally to what tastes good, he built his convictions on the pursuit of flavour, the pairing of tastes and, above all, sharing. After experiences in Lyon restaurants, French and Chinese cooking alike, notably Papasan alongside Nhung and Vlad, which left a singular mark on his career, it went without saying that what came next would be his own creation. His many travels through Asia, and particularly in China and Taiwan where he lived, have given Morgan a deep familiarity with Asian flavours and techniques. Three principles are dear to him: the products, the combinations and the techniques, the foundations of his creativity. Morgan's aim is to surprise, to delight and to give pleasure, while remaining true to his convictions.
Front of house
After several years in Canada working in sound engineering, Maxime made his way in a fine-dining restaurant in Rognes. Armed with an experience that went well beyond the basics of service, he met Morgan. It was an instant connection, driven by a deep respect for his creative approach. His guiding principle: to accompany Mofusan's passengers into chef Morgan's world, the world of a truly flavourful experience.
